Deliberately break the horizontal (bed) joints so the stone
pattern will not resemble a brick pattern.

The "organized unlevel" pattern on the left is used to make the stone look rustic.
In the pattern to the right, a number of rectangular pieces are placed vertical to give 
a more formal "castle like" appearance.
